Meet the Hibbelers
Two crazy kids fell in love while working on the road together entertaining and shop keeping at various Renaissance Faires across the country.
Jes, a self-taught Chef from humble beginnings in South Carolina gathered inspiration and a vision for Chateau Hibbele while traveling with Todd.
Todd entertained the masses as a performer and comedian for 12 years at Renaissance festivals and has a gift for bringing joy to everyone he encounters. Together Todd and Jes have created a brainchild that is equal parts delicious and delightful.
Now these crazy kids, have a kid and they travel the country full time running their business. From Florida to Ohio and nearly everywhere in between. Chateau Hibbele has grown thanks to our family, friends, and more incredible guests than we can count.

Chase Smith
Chase Smith is an integral member to the Chateau Hibbele team. Originally from Rock Hill, South Carolina, Chase trained under award winning smokehouse chefs and has mastered southern cuisine and is a BBQ master.
Chase has opened and operated many restaurants in the Charlotte area but now he is traveling with the Chateau full time. From recipe development to running the kitchen on a faire day, Chase does it all.
